If you ask David, Borgo Alveria chef and soul, what he thinks about cookery, he will tell you that you can learn all the techniques but not the taste: the creative ability to capture what is missing in a recipe, which herbs can turn an ordinary dish into a delicacy, this ability either you have it or not. He inherited it from his mum, and even more from his grandmother Tina, who cooks an unforgettable 'caponata' and grilles the tastier peppers you'll ever eat.
First and foremost, a matter of taste. But, also, a question of choosing high quality ingredients. On this aspect, we don't go for any compromise: we look for the best salami and typical cheese, we buy meat directly from its producer nearby, and fish comes from our local sea to your table. Seasonal vegetables are a must. Mr. Cascino plants them in his piece of land just next to us, he is a great master of organic production. Carrots taste of carrots, beans of beans and tomatoes simply have sunshine inside.
Finally, the looks. An Italian proverb says that appearance counts. Well, have a look around after placing your order: look at the stonewalls, the lights, the floor; observe the ceramics, the glasses, the metals. Once your dish is served, enjoy its colours and its composition. Now taste it. And don't expect an offer limited to Sicilian traditional recipes. David likes to travel and each time he comes back full of new ideas. The risotto, for instance, is not the typical speciality from a Sicilian chef; but it is, indeed, for someone who studied at Gualtiero Marchesi school! So, follow our suggestion: if you do find it in the menu, give it a try!
